Mushy peas

    Frozen peas retain their nutrients much more than tinned, and they taste fresh and delicious. You can add more liquid (water or cream) depending how mushy you want your peas. Use semi-skimmed milk if you're watching your calories.

    Serves: 4 

    • 300g (11 oz) frozen peas
    • 4 tablespoons double cream
    • 1 tablespoon butter
    • 1/2 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper

    1. Bring a shallow pot of lightly salted water to the boil over medium high heat. Add frozen peas, and cook for 3 minutes, or until tender.
    2. Drain peas, and transfer to a blender or large food processor. Add cream, butter, salt and pepper to peas, and process until blended, but still thick with small pieces of peas. Adjust seasonings to taste, and serve immediately.

    Took shortcuts. I used a hand held potato masher and it was much easier. The peas mashed up rather nicely too!  -  19 Jan 2011


    Altered ingredient amounts. We added a dash of Matouks Calypso sauce and 4 chopped spring onions just before blending. Yummmmmm  -  04 Mar 2010
