Date Cake with Lemon Sauce

    This is a wonderful cake to be enjoyed anytime of the day. It's a moist cake, which is packed full of dates and walnuts and served with a luscious lemon sauce.

    Serves: 18 

    • 150g dates, pitted and chopped
    • 2 teaspoons bicarbonate of soda, divided
    • 250ml boiling water
    • 250g plain flour
    • 200g caster sugar
    • 250g mayonnaise
    • 110g chopped walnuts
    • 4 tablespoons water
    • 1 egg, beaten
    • 200g caster sugar
    • 110g butter
    • 3/4 teaspoon grated lemon zest
    • 3 tablespoons lemon juice

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm tin.
    2. In a large bowl, mix dates, 1 teaspoon bicarbonate of soda and boiling water. Cool.
    3. Add flour, 200g sugar, mayonnaise and remaining bicarbonate of soda. Use medium speed of mixer and beat until mixture is well blended. Stir in nuts. Spread batter in prepared tin.
    4. Bake for 45 minutes or until a skewer inserted in centre comes out clean.
    5. While the cake is baking, prepare the lemon sauce. Mix beaten egg and 4 tablespoons water; place in a medium saucepan. Add 200g sugar, butter, lemon zest and juice. Heat to boiling over medium heat, stirring constantly. Serve sauce over warm cake. Refrigerate any leftover sauce.

    On my second attempt, I skewered my cake, then poured the sauce over. This got the citrus taste right into the cake. Winner both times. 👍  -  15 Feb 2015

    this is really soft and light. i couldnt bring myself to eat the sauce though, it looked and smelled like a pan of melted butter and really put me off. the cake by itself was great though.  -  24 Jul 2006  (Review from Allrecipes US | Canada)
