    About this recipe: A super-moist muffin, which is a cinch to make. They are made with oats, dark brown soft sugar, dates and apple sauce. A great way of getting some dietary fibre into your food.

    Makes: 12 muffins

    • 125g plain flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 80g porridge oats
    • 250ml milk
    • 5 tablespoons dark brown soft sugar
    • 2 egg whites
    • 75g butter, melted
    • 4 tablespoons apple sauce
    • 75g chopped pitted dates

    1. Preheat oven to 180 C / Gas 4. Grease or line a 12-hole muffin tin.
    2. In a large bowl, sieve together flour, baking powder, bicarbonate of soda and salt. Stir in the oats, milk, sugar, egg whites, butter, apple sauce and dates; mix just to combine. Spoon batter into prepared muffin tin.
    3. Bake at 180 C / Gas 4 for 30 minutes or until a skewer inserted into a muffin comes out clean.
