Makes: 12 muffins
125g plain flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
80g porridge oats
5 tablespoons dark brown soft sugar
2 egg whites
75g butter, melted
4 tablespoons apple sauce
75g chopped pitted dates

Preheat oven to 180 C / Gas 4. Grease or line a 12-hole muffin tin.
In a large bowl, sieve together flour, baking powder, bicarbonate of soda and salt. Stir in the oats, milk, sugar, egg whites, butter, apple sauce and dates; mix just to combine. Spoon batter into prepared muffin tin.
Bake at 180 C / Gas 4 for 30 minutes or until a skewer inserted into a muffin comes out clean.
