450g dark brown soft sugar
250g plain flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon bicarbonate of soda
1 tablespoon distilled malt vinegar
65g caster sugar for decoration

Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin.
In a large bowl, cream margarine and sugar. Add eggs one at a time and mix until light and fluffy. Sieve together the flour, cinnamon, cloves, ginger and bicarbonate of soda. Add dry ingredients to sugar mixture alternately with the buttermilk and vinegar. Mix well with an electric mixer for 2 to 3 minutes.
Pour the batter into the prepared tin and bake in preheated oven for 35 to 40 minutes or until the cake feels firm.
After cooling, cut cake into 5cm square bars. Roll each bar in sugar and store in covered tins.
