Gammon steaks on the barbecue

    This is a great way of cooking gammon steaks. They're cooked on the barbecue and basted with a sweet horseradish sauce. Enjoy with grilled pineapple, if desired.

    Serves: 4 

    • 220g dark brown soft sugar
    • 4 tablespoons lemon juice
    • 5 tablespoons horseradish
    • 2 slices gammon

    1. Preheat a barbecue for high heat and lightly oil cooking grate.
    2. In a small bowl, mix dark brown soft sugar, lemon juice and horseradish.
    3. Heat the dark brown soft sugar mixture in the microwave on high heat 1 minute or until warm.
    4. Score both sides of gammon. Place on the prepared barbecue. Baste continuously with the dark brown soft sugar mixture while cooking. Grill for 6 to 8 minutes per side or to desired doneness.
