Oaty coconut slices

    These delicious cake-like slices are made with oats, dark brown soft sugar, coconut and pecans. Instead of pecans, walnuts or hazelnuts would also work a treat!

    Makes: 24 5cm square bars

    • 100g margarine
    • 110g dark brown soft sugar
    • 125g plain flour
    • 1/2 teaspoon salt
    • 40g porridge oats
    • 220g dark brown soft sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 2 tablespoons plain flour
    • 35g desiccated coconut
    • 1/2 teaspoon baking powder
    • 55g chopped pecans

    1. Preheat oven to 180 C / Gas 4.
    2. Cream the margarine with 110g dark brown soft sugar. Add 125g flour, salt and oats; mix. Press into the bottom of one 20x30cm or similar sized baking tin.
    3. Bake in preheated oven for 15 minutes.
    4. Beat eggs well. Then beat in 220g dark brown soft sugar and vanilla. Stir in 2 tablespoons flour and baking powder, blending well. Stir in coconut and pecans. Spread over the baked base.
    5. Bake for an additional 15 to 20 minutes at 150 C / Gas 2. Let cool then cut into 5cm bars and wrap in cling film before storing in an airtight container.

    WOW. I was trying to duplicate the very addictive Sheila's Dream Bars from Potbelly, and these are EXACTLY what I was looking for! I made a few tweaks and they were to die for. I added a couple tablespoons of water to the crust mixture to hold it together. I substituted milk chocolate chips for the coconut (personal preference), and used half pecans and half walnuts. Fantastic, a definite keeper!! NOTE: This recipe DOES NOT double well. I learned that the hard way!     They're not even close to Sheila's Dream Bars at Potbelly Sandwich Shoppe but have to say that they made a yummy recipe anyway!
