Spiced Treacle Cookies
These are the perfect Christmas cookies that can be enjoyed anytime of the year. They are flavoured with black treacle, cloves, nutmeg and cinnamon and dotted with walnuts, raisins and mixed peel.
Ingredients
Makes: 36 biscuits
- 440g plain flour
- 1 tablespoon bicarbonate of soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 1/2 teaspoons ground cinnamon
- 75g margarine
- 4 tablespoons caster sugar
- 350g black treacle
- 4 tablespoons buttermilk
- 120g chopped walnuts
- 290g raisins
- 120g cut mixed peel

- Sieve together flour, bicarbonate of soda, salt, cloves, nutmeg, cinnamon and set aside.
- Mix together the margarine, sugar, treacle and buttermilk until well blended. Add the flour mixture, walnuts, raisins and mixed peel. Mix well until combined.
- Turn dough onto a large sheet of greaseproof paper or foil. Shape into a roll 5cm in diameter. Wrap in the paper or foil and refrigerate for several hours or overnight (or upto two weeks).
- About 15 minutes before baking time, pre-heat to 180 C / Gas 4. Grease baking trays.
- Cut chilled dough into 1.5cm thick slices and place on prepared baking trays. Bake about 15 minutes or until done.

I made a variation of this over the holidays- basically I omitted the raisins because I forgot them on my shopping list. They came out wonderfully anyway.
