Mango and coriander salsa

    A fruity salsa, which is deliciously refreshing. Mangoes are tossed with spring onions, garlic, coriander and fruit juices. It goes well with chicken, fish or fajitas.

    Serves: 6 

    • 2 mangoes, peeled, seeded and diced
    • 2 spring onions, chopped
    • 1 clove garlic, finely chopped or to taste
    • 3 tablespoons chopped fresh coriander
    • 1 tablespoon lime juice
    • 1 tablespoon orange juice

    1. Stir the mangoes, spring onions, garlic, coriander, lime juice and orange juice together in a bowl. Chill at least 1 hour before serving.

    I love this recipe but I added more cilantro and a chopped and seeded tomato . The key to success is to use fruit that are firm but not overly ripe because otherwise the salsa is too juicy and therefore runny. I use Italian tomatoes or remove the seeds and inner flesh from my garden tomatoes .
