This pineapple cake is insanely easy, and comes with a luscious cream cheese icing. This is a perfect birthday cake or special occasion cake, but no one will guess it is so easy to prepare! It also contains no butter or oil.
This cake on its own is dairy free, minus the cream cheese icing. To keep it dairy free, make a buttercream icing with margarine, or a simple icing sugar drizzle made with pineapple juice.
You could also use two 23cm round cake tins instead; adjust baking time as needed.
