About this recipe: This pineapple cake is insanely easy, and comes with a luscious cream cheese icing. This is a perfect birthday cake or special occasion cake, but no one will guess it is so easy to prepare! It also contains no butter or oil.

Serves: 24

  • 250g plain flour
  • 400g caster sugar
  • 2 eggs
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon vanilla extract
  • 1 (567g) tin pineapple with juice, pureed
  • 225g cream cheese, at room temperature
  • 110g butter
  • 190g icing sugar
  • 1 teaspoon vanilla extract

Prep:30min  ›  Cook:1hr  ›  Ready in:1hr30min

  1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm cake tin, and line with parchment.
  2. In a large bowl, mix together the flour, sugar and bicarb. Make a well in the centre and add the eggs, vanilla and pureed pineapple (pureed with its juice from the tin). Mix well to blend and tip into prepared tin.
  3. Bake for 45 minutes, or until a skewer inserted into cake comes out clean.
  4. To make the icing: in a medium bowl, combine cream cheese, butter, icing sugar and 1 teaspoon of vanilla. Beat until creamy. Spread on warm cake.

Dairy free

This cake on its own is dairy free, minus the cream cheese icing. To keep it dairy free, make a buttercream icing with margarine, or a simple icing sugar drizzle made with pineapple juice.

Cake tins

You could also use two 23cm round cake tins instead; adjust baking time as needed.
