Never-fail meringue for pie

    Some people find it hard to make a good meringue - this recipe is for those who've yet to find success. Trust me, you will with this recipe!

    Serves: 8 

    • 1 tablespoon cornflour
    • 2 tablespoons cold water
    • 100ml (4 fl oz) boiling water
    • 1 teaspoon vanilla extract
    • 3 egg whites
    • 6 tablespoons caster sugar
    • 1 pinch salt

    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Blend cornflour and cold water in a saucepan. Add boiling water, and stir until thick and clear. Cool completely.
    2. Beat egg whites till foamy. Gradually beat in sugar, beating until stiff and glossy. Add salt and vanilla, and slowly beat in cold cornflour mixture. Beat quickly for several minutes.
    3. Spread meringue on filled, cooled 23cm pie.
    4. Bake at 180 C / Gas mark 4 for 10 minutes.

    This was really easy to make, and was a delicious topping to a raspberry jam tart (it really works). My only problem was the corn flour part - it went thick and clear but as it cooled it formed a jelly...I mashed this up and whizzed it in but there were little bits. What did I do wrong - too much water? Too cool? Too hot?? Thanks  -  25 Feb 2011


    absolutley perfect and tasty meringue. A little more work than usual but there is no guess as to how it will turn out. Tried it twice and it came out the same both times - perfect !!  -  21 Jul 2008
