Egg nog custard tart

    If you like the classic Christmas tipple, you'll love this egg nog tart. It's a fab change of pace round Christmastime, and needs to be made ahead of time - helpful if you've got guests coming round!

    Ingredients
    Serves: 7 

    • 60ml cold water
    • 1 sachet powdered gelatine
    • 250ml milk
    • 150g caster sugar
    • 2 eggs, lightly beaten
    • 60ml dark rum
    • 250ml whipping cream
    • 1 (23cm) digestive biscuit base or tart shell, baked
    • 1/2 teaspoon ground nutmeg

    Method

    1. In a small bowl, let gelatine dissolve in the cold water; set aside.
    2. Combine milk and 1/2 of the sugar in a small glass bowl. Microwave for 3 minutes or until milk begins to boil.
    3. In a medium bowl, stir gelatine mixture into the heated milk and sugar; gradually whisk in eggs using a wire whisk. Microwave mixture stirring with whisk after each minute until it thickens. Remove from microwave and pour in rum. Keep mixture refrigerated until it begins to set being sure to stir it occasionally as it chills.
    4. In a medium bowl, whip cream until soft peaks form; beat in remaining 1/2 of sugar. Set aside 1/2 cup of this mixture for garnish; keep refrigerated. Fold remaining whipped cream into microwaved mixture and pour over prepared base. Cover and refrigerate for 2 to 3 hours.
    5. Serve with reserved whipped cream and a dusting of nutmeg.

    Very good pie the only thing is I used a spiced rum need to use a milder rum without so many extra flavors so the egg nog flavor isn't over shadowed  -  09 Oct 2014  (Review from Allrecipes US | Canada)
