375g plain flour
1 1/2 teaspoons bicarbonate of soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
200g caster sugar
275g golden syrup
1 1/2 teaspoons cider vinegar

Preheat oven to 180 C / Gas 4. Lightly grease two baking trays.
Combine flour, bicarb and spices. In a large bowl, cream margarine and sugar. Beat in the egg. Beat in the golden syrup and cider vinegar. Gradually blend in the dry ingredients.
On a floured surface, roll out dough to a thickness of 5mm. Using a small round cutter, about 3-4cm in diameter, cut into rounds and place 4cm apart on prepared baking trays. Bake for 8-12 minutes until firm to the touch. Transfer to wire racks to cool.
followed recipe but you need to add a lot more flour in than stated. once you got a pliable dough it is a great recipe, I dread to think how they would have turned out if I hadn't added more flour. - 15 Aug 2015
