    A Christmas and New Year tradition - and a must if you're Wassailing. Be sure to toast "Be in good health" before your first sip.

    Serves: 36 

    • 450g (16 oz) caster sugar
    • 1L (1 3/4 pints) water
    • 2 cinnamon sticks
    • 8 whole allspice berries
    • 1 tablespoon whole cloves
    • 1 slice fresh root ginger
    • 1L (1 3/4 pints) orange juice
    • 450ml (16 fl oz) lemon juice
    • 2L (3 1/4 pints) apple juice

    Prep:1hr  ›  Cook:20min  ›  Ready in:1hr20min 

    1. In a large saucepan over high heat, combine sugar and water. Boil for 5 minutes. Remove from heat, and add cinnamon sticks, allspice berries, cloves and ginger. Cover and let stand in warm place for 1 hour.
    2. Strain liquid into a large pot. Just before serving, add juices and cider and quickly bring to the boil. Remove from heat and serve.

    Altered ingredient amounts. Excellent Wassail. A friend of mine made some brilliant Wassail last year and This beat it!. I left out the Ginger and it was fantastic. We let everyone spike it with Rum themselves. Great easy recipe.  -  21 Jul 2008


    Something else. The best! Try adding red wine... after this was finished simmering I put 1/2 in a pitcher for the kids, and added a whole bottle of cabernet to the rest for the adults. A real treat!  -  21 Jul 2008
