About this recipe: Simple to make, simple to eat and enjoy, this basic chocolate cake with soured cream and just a hint of vanilla is..simply delicious! Mint icing makes a great topper for this one.


Serves: 12 

  • 285g cake flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 120ml water
  • 85g cooking chocolate
  • 110g butter
  • 300g caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 155g soured cream

  1. Preheat oven to 180 C / Gas 4. Grease two 23cm round cake tins.
  2. Sift the flour with the bicarbonate of soda and salt three times.
  3. Boil the water and add it to the chocolate, and stir until melted.
  4. Cream together the butter and the sugar. Add the eggs and mix well. Stir in the vanilla.
  5. Blend in the chocolate mixture to the creamed mixture. Add the flour alternately with the soured cream, beating well after each addition. Pour mixture into two 23cm round cake tins.
  6. Bake in preheated oven for 30 minutes or until cakes tests done.
