Nutty orange Christmas squares

    A buttery mixture chock full of candied fruit, nuts and orange is baked, then spread with an orange butter icing, cut into squares and served to delighted guests, family and friends. Orange you excited to make and share this delectable Christmas treat?

    Serves: 36 

    • 80g roughly chopped glace cherries
    • 80g candied mixed citrus peel
    • 4 tablespoons plain flour
    • 110g butter
    • 100g caster sugar
    • 90ml orange juice
    • 1 egg
    • 1/4 teaspoon almond extract
    • 190g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 60g chopped walnuts
    • Icing:
    • 180g icing sugar
    • 45g butter
    • 2 tablespoons orange juice

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 23cm square cake tin.
    2. In a small bowl, toss together the candied fruit and 4 tablespoons of flour (just enough to coat the fruit).
    3. In a medium bowl, cream together the 110g butter and caster sugar. Stir in the 90ml orange juice, then the egg and almond extract. Sift together the flour, bicarbonate of soda and salt; stir into the creamed mixture. Finally, stir in the flour-coated fruit and the walnuts.
    4. Spread the mixture evenly in the prepared 23cm square cake tin. Bake for 20 minutes, or until bars start to pull away from the sides of the tin. Remove from the oven and cool before icing.
    5. To make icing:

    6. In a small bowl combine the icing sugar, 45g butter and 2 tablespoons orange juice. Beat until light and fluffy. Spread over cooled traybake , then cut into squares.

    This is a great bar cookie. I did find it a little crumbly, but of course I am at high altitude so it may be okay for sea level. They were great even without the frosting.  -  18 Dec 2000  (Review from Allrecipes US | Canada)
