Feta, mushroom and olive green salad

    Rome wasn't built in a day, but this Caesar-inspired salad can be put together in 15 minutes! The creamy dressing combines the flavours of Caesar dressing with ranch dressing, lemon juice and both olive and rapeseed oils. The unusual addition of stuffed green olives, feta cheese and mushrooms make this a refreshingly one-of-a-kind salad treat.

    Serves: 4 

    • 2 tablespoons Caesar salad dressing
    • 1 teaspoon ranch salad dressing
    • 1 teaspoon olive oil
    • 1 teaspoon rapeseed oil
    • 2 teaspoons lemon juice
    • 2 teaspoons dried basil
    • 1/2 teaspoon caster sugar
    • 270g garlic stuffed green olives
    • 1 head romaine lettuce, torn into bite sized pieces
    • 4 white mushrooms, sliced
    • 150g crumbled feta cheese
    • sea salt and freshly ground black pepper to taste
    • 80g grated Parmesan cheese

    1. In a small bowl stir together the Caesar salad dressing, ranch salad dressing, olive oil, rapeseed oil, lemon juice, basil and sugar; set aside
    2. Rinse the stuffed olives, shake off excess water, then cut each olive in half. Combine the olive halves, lettuce, mushrooms, and feta cheese in a mixing bowl.
    3. Drizzle with the dressing and toss to coat. Season to taste with salt and pepper. Sprinkle with Parmesan cheese to serve.

    I am a big fan of salads, not so much of green olives. I thought maybe I just haven't had a good dish with them in it, so I tried this recipe. I must say, I loved it. Its light, vibrant and plain delicious. I added some chopped bacon in it, because what doesn't taste good with bacon! It wasn't heavy with dressing and turned out good.
