Dark and delicious chocolate cake icing

    Rich plain chocolate icing made simple and scrumptious by creaming together plain chocolate, egg whites, vanilla, milk powder, sugar and margarine. Can be spread over all sorts of cakes, fairy cakes, muffins - the dark, dreamy and delicious possibilities are endless!

    Serves: 12 

    • 100g margarine
    • 480g icing sugar
    • 4 tablespoons dry milk powder
    • 4 tablespoons water
    • 85g plain cooking chocolate, melted
    • 1/4 teaspoon salt
    • 1 1/2 teaspoons vanilla extract
    • 1 egg white

    1. Cream together margarine and half of the icing sugar.
    2. Mix together milk powder and water. Add to the creamed mixture along with the rest of the icing sugar. Mix well.
    3. Stir in the chocolate, salt, vanilla and unbeaten egg white. Mix well and beat until fluffy. Spread on cooled cake.

    In a pinch, I thought this was a great recipe. While I did use dry milk powder, I think you could've used milk and added until you got a smooth consistency you like. I used softened butter and not "shortening." Needed a white icing, so I skipped the chocolate - very tasty, great consistency, easy to make. Note, I would only add 1/4 confectioner's sugar at a time to mix and add the portions of milk or dry poweder milk+water as needed to keep the dust down and keep a creamy consistency.  -  23 Oct 2010  (Review from Allrecipes US | Canada)
