'Freckles and warts' cookies

    What's in a name? These are actually plain and white chocolate chip cookies with whole walnuts - the chocolate chips are the 'freckles' and the nuts are the 'warts'! Truly chock-a-block with walnuts, perhaps these cookies have a face only a mother could love, but the gorgeous taste and chewy, nutty texture will be loved and enjoyed by everyone, warts and all!

    Serves: 36 

    • 115g butter, softened
    • 150g dark brown soft sugar
    • 125g apple sauce
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 440g plain flour
    • 1 1/2 teaspoons bicarbonate of soda
    • 1/2 teaspoon salt
    • 210 plain chocolate chips
    • 225g white chocolate chips
    • 400g shelled whole walnuts

    1. Preheat the oven to 190 C / Gas 5. Grease baking trays.
    2. In a large bowl stir together the butter, dark brown soft sugar, apple sauce, eggs and vanilla. Combine the flour, bicarb and salt and gradually stir into the apple sauce mixture. Fold in the plain chocolate chips, white chocolate chips and walnuts until evenly distributed. Drop by rounded spoonfuls onto the prepared baking tray.
    3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    This could have been a little sweeter for us. I'm guessing that it's missing white sugar because of the sweetness and that it never spread while baking. I ended up pressing them slightly to make them more cookie shape. If you don't like your cookies too sweet, you will enjoy these cookies.  -  11 Mar 2017  (Review from Allrecipes US | Canada)
