Shimmery sweet French breakfast muffins

    These simple egg, milk, flour, sugar and spice muffins are given the the delicate glitz of Paris when the tops are dipped in a shimmery cinnamon, sugar and melted butter glaze. Like a sprinkling of stardust, this topping gives these sweet, dainty muffins the taste and sparkle of 'ooh la la'. Magnifique!

    Serves: 12 

    • 190g plain flour
    • 100g caster sugar
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon ground nutmeg
    • 1/8 teaspoon salt
    • 1 egg, lightly beaten
    • 120ml milk
    • 75g butter, melted
    • 4 tablespoons caster sugar
    • 1/2 teaspoon ground cinnamon
    • 75g butter, melted

    1. Preheat oven to 180 C / Gas 4. Grease muffin tin, or line with muffin cases.
    2. In a medium mixing bowl stir together flour, 100g sugar, baking powder, nutmeg and salt. Make a well in the centre of the mixture. Stir together egg, milk and 75g melted butter. Add egg mixture to flour mixture; stir until just moistened (mixture may be lumpy). Spoon mixture into prepared muffin tin.
    3. Bake in preheated oven for 20 to 25 minutes. Meanwhile, combine 4 tablespoons sugar and cinnamon. When muffins are finished baking, dip tops of muffins in the other 75g melted butter, then in the cinnamon sugar mixture. Serve warm.

    First batch had a chemical after taste, but consistency was good. So I reduced baking powder to 1/2 tsp and 2nd batch were very really nice! Put a tsp of nutella in the middle for an extra surprise!  -  28 Feb 2015


    Very simple and quick to make, light and tasty. My young boys think it's a bit like a pancake in a cupcake. I can recommend it for something a bit different.  -  09 Apr 2014


    These muffins are awesome! They are a huge hit with the family every time I make them. They work especially well as mini-muffins. ------- Update: I now use this recipe as a base for other muffins, like replace the nutmeg with vanilla and add 1 cup of blueberries. Delish!
