Moist fruit cocktail cake

    No butter or oil needed with this simple, super-moist cake made with tinned fruit cocktail and syrup, vanilla, egg, flour and sugar.

    Serves: 12 

    • 125g plain flour
    • 200g caster sugar
    • 1 egg
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon vanilla extract
    • 450g tinned fruit cocktail in syrup, undrained
    • 110g dark brown soft sugar

    Prep:5min  ›  Cook:40min  ›  Ready in:45min 

    1. Preheat oven to 180 C / Gas 4. Lightly grease one 23cm square cake tin.
    2. Combine the flour, caster sugar, egg, bicarb, vanilla and undrained fruit cocktail. Mix until blended and pour mixture into the prepared tin; sprinkle the top with the dark brown soft sugar.
    3. Bake at 180 C / Gas 4 for 40 minutes or until golden brown and firm.

    tried this receipe and it is rubbish done everything as it says took over hour and half to get anywhere near cooked didn't taste to bat but had a rubbery texture  -  29 May 2013
