Simple delicious fudge brownies

    Mmm, dairy free brownies never tasted so good! These fudgy brownies are baked with oil rather than butter giving them a lovely, moist dairy free texture that's not too rich. The ingredients are things you probably already have on hand, so these brownies are both convenient to make and delicious!

    Ingredients
    Serves: 24 

    • 65g unsweetened cocoa powder
    • 1/2 teaspoon bicarbonate of soda
    • 80ml vegetable oil
    • 120ml boiling water
    • 400g caster sugar
    • 2 eggs
    • 80ml vegetable oil
    • 165g plain flour
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt

    Method
    Prep:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm tin.
    2. In a large bowl, stir together the cocoa and bicarb. Add 80ml vegetable oil and boiling water. Mix until well blended and thickened. Stir in the sugar, eggs and remaining 80ml vegetable oil. Finally, add the flour, vanilla and salt; mix just until all of the flour is absorbed. Spread evenly into the prepared tin.
    3. Bake in the preheated oven for 35 to 40 minutes, or until a skewer inserted into the cake comes out clean. Allow to cool before cutting into squares.

    What a great recipe. Never having made brownies before and reading the reviews I almost tried a different recipe, so glad I stuck with this one. It was so quick and easy for such a delicious result. Thanks for sharing Trish  -  22 Oct 2014

    These brownies turned out PERFECT! Instead of baking them in a 9x13 pan, I made them in an 8x11 so that they were just a little thicker and I followed someone else's suggestion for adding the second 1/3 cup of oil BEFORE the eggs and sugar. I also added about half a bag of semi-sweet chocolate chips (I never make brownies without them!) and Oh My Goodness! These were the best home made brownies I've ever made!
