About this recipe:These are tasty little flat fried cakes that taste best served warm and dusted with icing sugar. They are made from a batter similar to a pancake mix, which is poured through a funnel (or very wide nozzle) to create circular ribbons that are deep-fried to hold them together. Delicious!
150ml milk, or as needed
1/4 teaspoon salt
2 tablespoons caster sugar
165g sifted plain flour
3/4 teaspoon baking powder
1 litre vegetable oil for frying
2 tablespoons icing sugar for dusting

Beat egg. Mix in milk. Sift flour, salt, caster sugar and baking powder; beat into egg mixture until smooth, adding a little more milk if the mixture is too thick.
Pour oil into a heavy pan until it is 2.5cm deep. Heat to 190 C.
Pour the batter through a funnel into the oil with a circular motion to form a spiral. Fry until golden brown in colour; turn over to cook the other side. Remove each funnel cake as it is cooked; drain on kitchen paper. Repeat with remaining batter.
Dust with icing sugar while still warm.
Snip the corner off a disposable piping bag to use in place of a funnel; fill with a small amount of batter and squeeze gently.
