    About this recipe: A delicious dish that can be served as a starter or main course. It's made with fresh linguine, oysters, sweetcorn, crab, green beans and mushrooms. Enjoy with crusty bread.

    Makes: 2 - 4 servings

    • 50g butter
    • 225g fresh mushrooms, quartered
    • 1 teaspoon Cajun seasoning
    • 1 teaspoon finely chopped garlic
    • 24 shucked oysters, quartered
    • 75g sweetcorn kernels, blanched
    • 160g green beans, chopped
    • 2 tablespoons chopped roasted red peppers
    • 125ml fish stock
    • 285g fresh linguine pasta
    • 30g butter
    • 2 tablespoons plain flour
    • 2 tablespoons chopped fresh parsley
    • 3 tablespoons thinly sliced spring onion
    • 115g crab meat

    1. In a small saucepan, melt 30g butter. Stir in flour to make a paste (roux) and set aside.
    2. Saute mushrooms, Cajun spice and garlic in 60g butter over medium-high heat for 2 minutes. Add oysters, sweetcorn, green beans and roasted red peppers. Saute for 1 1/2 minutes. Add stock and linguine; bring to a slight simmer.
    3. Mix in roux until sauce thickens, then reduce heat. Stir in parsley and spring onions, followed by the crab meat. Heat through and serve immediately.
