225g fresh mushrooms, quartered
1 teaspoon Cajun seasoning
1 teaspoon finely chopped garlic
24 shucked oysters, quartered
75g sweetcorn kernels, blanched
160g green beans, chopped
2 tablespoons chopped roasted red peppers
125ml fish stock
285g fresh linguine pasta
2 tablespoons plain flour
2 tablespoons chopped fresh parsley
3 tablespoons thinly sliced spring onion
115g crab meat

In a small saucepan, melt 30g butter. Stir in flour to make a paste (roux) and set aside.
Saute mushrooms, Cajun spice and garlic in 60g butter over medium-high heat for 2 minutes. Add oysters, sweetcorn, green beans and roasted red peppers. Saute for 1 1/2 minutes. Add stock and linguine; bring to a slight simmer.
Mix in roux until sauce thickens, then reduce heat. Stir in parsley and spring onions, followed by the crab meat. Heat through and serve immediately.
