Cajun Oyster Linguine

    A delicious dish that can be served as a starter or main course. It's made with fresh linguine, oysters, sweetcorn, crab, green beans and mushrooms. Enjoy with crusty bread.

    Ingredients
    Makes: 2 - 4 servings

    • 50g butter
    • 225g fresh mushrooms, quartered
    • 1 teaspoon Cajun seasoning
    • 1 teaspoon finely chopped garlic
    • 24 shucked oysters, quartered
    • 75g sweetcorn kernels, blanched
    • 160g green beans, chopped
    • 2 tablespoons chopped roasted red peppers
    • 125ml fish stock
    • 285g fresh linguine pasta
    • 30g butter
    • 2 tablespoons plain flour
    • 2 tablespoons chopped fresh parsley
    • 3 tablespoons thinly sliced spring onion
    • 115g crab meat

    Method
    Prep:25min  ›  Cook:15min  ›  Ready in:40min 

    1. In a small saucepan, melt 30g butter. Stir in flour to make a paste (roux) and set aside.
    2. Saute mushrooms, Cajun spice and garlic in 60g butter over medium-high heat for 2 minutes. Add oysters, sweetcorn, green beans and roasted red peppers. Saute for 1 1/2 minutes. Add stock and linguine; bring to a slight simmer.
    3. Mix in roux until sauce thickens, then reduce heat. Stir in parsley and spring onions, followed by the crab meat. Heat through and serve immediately.

    I made this with half the oysters and added a half pound of shrimp. It took a little longer than I expected, but after you prep the ingredients, you just keep adding things to your pan. Not too hard. Although I wished that I had added a little bit more salt. Still, everyone in my family enjoyed it and we ate the whole pan!  -  04 Jun 2001  (Review from Allrecipes US | Canada)

    I made it more like a stew or soup, served it over the pasta. And I didn't have fresh pasta but used whole grain linguine. I added some cod I had and I'm sure I tweaked it in other ways because I can't follow a recipe to save my life.     Excellent! Didn't have scallions grated a red onion and Sautéed with mushrooms. Used jarred oysters and used the liqueur as the stock. Used canned white corn rinsed and canned green beans rinsed. Also, didn't have fresh linguine, used boxed and cooked aldente before folding it in. This is delicious but keep a little chicken stock or pasta water aside to add if your family is eating at different times of the night. It tends to dry out but no problem.
