Garlic and Tomato Spaghetti

About this recipe: This is a fantastic vegetarian pasta that's a cinch to make. Spaghetti is tossed with a garlicky tomato sauce. Enjoy with crusty fresh bread, if desired.

Serves: 8 

  • 450g spaghetti
  • 4 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 450g passata
  • 1/2 teaspoon dried oregano
  • 1 pinch salt

  1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  2. Meanwhile, in a large frying pan over medium heat, saute garlic in olive oil until golden. Add passata, oregano and salt; stir until combined and cover. Lower heat and simmer for 30 minutes. Pour sauce over pasta and toss to coat; serve.
