Spice Cake

    A delicious cake, which is easy to make and tastes fantastic. It's buttery, flavoured with lime zest and spiced with nutmeg, cinnamon and allspice. Enjoy with a dusting of icing sugar and fresh fruit.

    Serves: 12 

    • 250g sifted plain flour
    • 1/2 teaspoon baking powder
    • 1/8 teaspoon salt
    • 300g caster sugar
    • 225g unsalted butter, chilled, cut into 15g size pieces
    • 1 1/2 teaspoons grated lime zest
    • 1 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground allspice
    • 3 eggs
    • 125ml milk

    1. Preheat oven to 180 C / Gas 4. Grease a 23x13cm loaf tin. Sieve together the flour, baking powder and salt; set aside.
    2. In a medium bowl, cream together the sugar and butter. Beat in the eggs one at a time, then stir in the lime zest, nutmeg, cinnamon and allspice. Add the dry ingredients alternately with the milk, stirring after each addition. Pour batter into the prepared tin.
    3. Bake for 75 to 90 minutes in the preheated oven, until a skewer inserted comes out clean. Cool in the tin for 10 minutes before turning out onto a rack to cool completely.

    Made this during the weekend. Kids loved it took some into the office and had really good feed back. I know they loved it as they came back for seconds. I did however make a smaller loaf and with the remainder made cupcakes.  -  06 Jan 2016


    Yummy! I made this cake with a little bit of changes. Used evaporated milk instead of milk,also added a teaspoon of honey, some raisins and almond. Changing milk to evaporated milk made the cake a bit richer and moist, if you like your cake a bit dense.     When a friend returned from a Grenada vacation and gave me a little souvenir basket of nutmeg, mace and other spices, I looked on the Web for a Genadian recipe to make to thank her. I found this Genadian Spice Cake. (None of my several Caribbean cuisine cookbooks had anything like it.) It was fabulous! Gloriously fragrant and moist. A total delight on the first try.
