250g sifted plain flour
1/2 teaspoon baking powder
1/8 teaspoon salt
300g caster sugar
225g unsalted butter, chilled, cut into 15g size pieces
1 1/2 teaspoons grated lime zest
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice

Preheat oven to 180 C / Gas 4. Grease a 23x13cm loaf tin. Sieve together the flour, baking powder and salt; set aside.
In a medium bowl, cream together the sugar and butter. Beat in the eggs one at a time, then stir in the lime zest, nutmeg, cinnamon and allspice. Add the dry ingredients alternately with the milk, stirring after each addition. Pour batter into the prepared tin.
Bake for 75 to 90 minutes in the preheated oven, until a skewer inserted comes out clean. Cool in the tin for 10 minutes before turning out onto a rack to cool completely.
Made this during the weekend. Kids loved it took some into the office and had really good feed back. I know they loved it as they came back for seconds. I did however make a smaller loaf and with the remainder made cupcakes. - 06 Jan 2016
