About this recipe:This is a fantastic way of preparing haddock. They are baked in a super-creamy cheese sauce and served. Enjoy with potatoes and vegetables, if desired.
900g haddock fillets
1 teaspoon salt
1/8 teaspoon ground black pepper
4 tablespoons finely chopped onion
3 tablespoons plain flour
1 teaspoon mustard powder
1/2 teaspoon salt
150ml double cream
150ml single cream
50g grated mature Cheddar cheese
50g grated mild Monterey Jack Cheddar cheese
1/4 teaspoon paprika

Preheat oven to 180 C / Gas 4. Lightly butter a medium or large baking dish.
Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.
In a frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, double cream and single cream. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.
Bake in preheated oven for 30 minutes, until brown and bubbly.
