About this recipe:A Mexican-inspired pasta dish, which is easy to make and absolutely delicious. Pasta is baked with sweetcorn, minced beef, chilli con carne and taco seasoning. Sprinkle with cheese just before serving, if desired.
450g minced beef
1 onion, chopped
1 stick celery, chopped
1 (400g) tin chilli con carne
1 (400g) tin chopped tomatoes
2 (198g) tins sweetcorn kernels, drained
4 tablespoons salsa
1 (30g) packet taco seasoning mix

Preheat oven to 120 C / Gas 1/2.
In a large frying pan over medium heat, combine the minced beef, onion and celery and saute for 10 minutes or until the meat is browned and the onion is tender. Drain the fat and set aside.
In a separate saucepan, cook pasta according to package directions. When cooked, drain the water and stir in the meat mixture, chilli con carne, tomatoes, sweetcorn, salsa and taco seasoning mix. Mix well and place entire mixture into a 25x38cm baking dish.
Bake in preheated oven for 20 minutes or until thoroughly heated.
