    About this recipe: This bread is sweet, fruity and oh-so-good. It's based on the classic Hawaiian bread and is soft, light and flavoured with banana, coconut and pineapple.

    Serves: 1 loaf

    • 115g mashed banana
    • 120g crushed pineapple, with juice
    • 1 egg
    • 4 tablespoons milk
    • 50g margarine, softened
    • 1 teaspoon coconut extract
    • 1/2 teaspoon salt
    • 5 tablespoons caster sugar
    • 25g instant potato flakes
    • 410g bread flour
    • 1 1/2 teaspoons dried active baking yeast

    1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Light setting; press Start.
