About this recipe: A delicious meal, which is quick and easy to make. Chicken breasts are seasoned with herbs, cooked and served with pasta. Enjoy as is or add a side of steamed asparagus.


Serves: 4 

  • 450g vermicelli pasta or spaghetti
  • 4 skinless, boneless chicken breast fillets
  • salt and pepper to taste
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon crushed chillies
  • 4 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 onion, chopped
  • 250ml chicken stock

  1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  2. Meanwhile, season chicken with salt and pepper, basil, rosemary, Cajun seasoning and crushed chillies. Heat oil in a large frying pan over medium heat; add chicken and cook until browned. Remove chicken from frying pan and stir in garlic and onions; cook and stir until clear.
  3. Return chicken to frying pan over onion mixture and add stock. Simmer until chicken is cooked through and no longer pink inside; spread mixture over pasta and serve.
