Smoked Salmon Pasta Salad

    A delicious salad, which is perfect for the warm summer months. Pasta is served with cucumber, smoked salmon, tomato, red pepper, cheese and blue cheese dressing.

    Serves: 4 

    • 225g pasta bows (farfalle)
    • 2 tablespoons extra-virgin olive oil
    • 225g cucumber, sliced
    • 225g smoked salmon, chopped
    • 1 large tomato, sliced
    • 1 small red pepper, julienned
    • salt and freshly ground black pepper to taste
    • 55g Monterey Jack cheese, divided
    • 125ml blue cheese salad dressing

    Prep:15min  ›  Cook:10min  ›  Extra time:30min chilling  ›  Ready in:55min 

    1. Bring a large pot of lightly salted water to the boil and add pasta. Cook until al dente, 8 to 10 minutes. Drain and rinse under cold water. Transfer to a serving bowl and gently toss with the olive oil until all the pasta is coated. Cover and chill at least 30 minutes.
    2. Arrange the cucumber slices around the edges of the pasta. Top pasta with smoked salmon, tomato and red pepper. Season with salt and pepper. Top with cheese and salad dressing to serve.

    Great but I added an avocado which made it tastier and left out the blue cheese salad dressing, as it would have been very greasy with the olive oil and dressing.  -  02 Aug 2013


    What a wonderful combination of salmon,pasta, and exquisite ingedrients. I think the measured amounts of the combined ingredients makes this recipe work, it savors the palate. The taste is lasting and makes a flavor statement. Try it yourself and see what I am saying about the satisfying taste.     Because I didn't have some of the ingredients in the house that I thought I had, I changed the recipe just a bit, substituting the blue cheese dressing with a light olive oil Italian dressing, and adding some capers and dill.
