Honey butter carrots

    This carrot side dish will be loved by everybody. It's easy to make and absolutely delicious. Carrots are tossed in butter, honey, lemon juice and ground ginger.

    Makes: 6 servings

    • 450g carrots, sliced
    • 50g butter
    • 2 1/2 tablespoons honey
    • 1 pinch ground ginger
    • 1 tablespoon lemon juice or to taste

    1. Bring a pot of water to the boil. Add carrots and cook until tender but still firm, about 5 minutes. Drain.
    2. In a large frying pan over low heat, melt butter with honey. Stir in ground ginger and lemon juice. Stir in carrots and simmer until heated through.

    Nice change from regular carrots - I used a steam in bag and then just added the rest of the ingredients. I only used 2 Tbsp. of light butter and a splash of lemon juice. These turned out to be very sweet.  -  02 Dec 2010  (Review from Allrecipes US | Canada)


    Used a couple of grates of fresh gingerroot instead of powder and a couple of grates of lemon rind in addition to lemon juice and it was delicious.
