About this recipe: These snacks are sweet, chewy and incredibly moreish. They are flavoured with honey and dotted with walnuts and dates.

Makes: 1 20cm square tin

  • 30g butter
  • 175g honey
  • 2 eggs
  • 100g plain flour
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 60g chopped walnuts
  • 75g dates, pitted and chopped
  • 40g icing sugar for decoration

  1. Preheat oven to 180 C / Gas 4. Butter a 20cm square cake tin.
  2. Melt the butter over low heat and pour into a large mixing bowl. Add honey and eggs; beat well. Mix in the flour, baking powder and salt. Mix in the walnuts and dates. Spread batter in tin.
  3. Bake for 25 minutes in the preheated oven or until light brown. Let cool for 5 to 10 minutes. Cut into bars and roll in icing sugar.
