Blueberry Peach Cobbler

    A fantastic fruity dessert that everyone will love. It's a cinch to make and goes well with whipped cream or ice cream. Feel free to use other fruits of your choice. The recipe works well with both fresh and frozen fruit.

    Makes: 1 2 litre baking dish

    • 300g blueberries
    • 500g sliced peaches
    • 4 tablespoons cornflour
    • 125g caster sugar
    • 30g butter
    • 125g plain flour
    • 2 teaspoons baking powder
    • 4 tablespoons caster sugar
    • 1/4 teaspoon salt
    • 4 tablespoons porridge oats
    • 1 teaspoon grated lemon zest
    • 1/4 teaspoon ground cinnamon
    • 50g butter
    • 125ml milk

    1. Preheat oven to 200 C / Gas 6.
    2. If you're using frozen fruit, thaw and drain it before proceeding. Combine fruit in an ungreased 2-litre baking dish. Mix the cornflour and 125g sugar; toss with fruit mixture. Dot with 30g butter and set aside.
    3. Sieve the flour, baking powder, sugar and salt into a bowl. Stir in the oats, lemon zest and cinnamon. Cut in 50g butter until it's the size of small peas. Stir in milk to form a stiff batter. Spoon dollops of batter over the fruit in the baking dish; the batter may not entirely cover the fruit.
    4. Bake in the preheated oven until the fruit is bubbling and the topping is golden brown, about 30 minutes. Allow to cool about 15 minutes. Serve warm.

    This was good, but it was a little wetter than I would have liked. I did used frozen peaches, but they were very well drained before putting the cobbler together. I used blueberries as suggested since huckleberries don't seem to be available in my area.
