    About this recipe: This vegetarian pasta is quick and easy to make. It's refreshing and absolutely delicious. Pasta is tossed with Parmesan, peppers and red onion in a wonderful dressing. Pop any leftovers into packed lunches.

    Serves: 12 

    • 450g fusilli pasta
    • 250ml Italian salad dressing
    • 250ml Caesar salad dressing
    • 80g grated Parmesan cheese
    • 1 red pepper, diced
    • 1 green pepper, chopped
    • 1 red onion, diced

    1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
    2. In a large bowl, combine the pasta, Italian salad dressing, Caesar dressing, red pepper, green pepper and red onion. Mix well and serve chilled or at room temperature.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
