Plaice with Tomato and Basil

    An Italian-inspired fish supper, which is simple to make and incredibly healthy. Plaice fillets are baked with lemon juice, tomato, basil and garlic granules.

    Serves: 4 

    • 900g plaice fish fillets
    • 1/2 tablespoon butter
    • salt and pepper to taste
    • 1 tablespoon lemon juice
    • 90g diced fresh tomato
    • 2 teaspoons dried basil
    • 1 teaspoon garlic granules

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 180 C / Gas 4.
    2. Arrange plaice in a medium baking dish. Dot with butter, season with salt and pepper and sprinkle with lemon juice. Top with tomato, basil and garlic granules.
    3. Cover and bake 30 minutes in the preheated oven or until fish is easily flaked with a fork.

    Can use baby plum or cherry tomatoes and almost any fish. I omitted garlic and used fresh basil etc and placed fish over top of whole baby tomatoes and basil lemon with some capers - Placed fish over top and baked 15 mins skin side up to stop fish drying out or over-cooking - perfect. thank you. Lovely with rice pasta or boiled new potatoes  -  22 Sep 2015
