Chocolate, Coconut and Walnut Cookies

    These moist cookies are quick and easy to make. They are drop cookies and are dotted with chocolate chunks, desiccated coconut and walnuts. Enjoy with a big mug of tea or coffee.

    Makes: 24 cookies

    • 225g butter, softened
    • 85g cream cheese
    • 110g dark brown soft sugar
    • 100g caster sugar
    • 2 eggs
    • 280g plain flour
    • 1 teaspoon bicarbonate of soda
    • 285g milk chocolate, chopped
    • 75g desiccated coconut
    • 200g chopped walnuts

    1. Preheat oven to 180 C / Gas 4.
    2. In a medium bowl, cream together the butter, cream cheese, dark brown soft sugar and caster sugar until smooth. Beat in the eggs one at a time, mixing well after each. Combine the flour and bicarbonate of soda; stir into the sugar mixture. Mix in the chopped chocolate, coconut and walnuts. Drop heaped tablespoons of the batter onto ungreased baking trays.
    3. Bake for 11 to 13 minutes in the preheated oven or until golden brown. Remove from baking trays to cool on wire racks.

    These cookies were pretty good. There are a few changes I will make next time I make them but that is due to personal preference. I will be adding some cinnamon and nutmeg next time.
