About this recipe: A delicious muffin, that's packed full of blueberry goodness. Enjoy as a snack anytime of the day. This highly adaptable recipe works well with any fruit, simply use the same flavoured yoghurt.

Makes: 12 muffins

  • 250g plain flour
  • 200g caster sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 225g blueberry flavoured yoghurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 60g butter, melted
  • 300g blueberries

  1. Preheat oven to 180 C / Gas 4. Grease a 12-hole muffin tin or line with paper cases.
  2. Stir together flour, sugar, bicarbonate of soda and baking powder. In a separate bowl, combine yoghurt, egg, vanilla, butter and blueberries. Stir mixtures together just until combined; batter will be very thick. Scoop into prepared muffin tin.
  3. Bake in preheated oven for 25 minutes.
