2 small red onions, finely chopped
6 cloves garlic, chopped
2 green pepper, diced
50g (2 oz) crushed peanuts
4 large tomatoes, coarsely chopped
350ml (12 fl oz) water
salt and cayenne pepper to taste

Heat oil in a saucepan over medium heat. Sauté onion, garlic, green pepper and peanuts for 2 to 3 minutes. Stir in tomatoes, water, salt and cayenne pepper; bring to the boil. Reduce heat to low and simmer at least 30 minutes; simmering for 1 1/2 hours is optimal.
Delicious! This meal as become a firm favourite in our house. We go easy on the cayenne pepper as our 6 yo prefers less heat, but she loves this dish! The brown rice really does make it something special, would definitely recommend NOT to swap that ingredient. - 07 Jul 2016
