These vegetarian burritos are folded into a wedge instead of being rolled. They are simply delicious. Flour tortillas are filled with refried beans, spring onions, tomato, olives, lettuce, avocado, cheese and soured cream.

    1. In a large serving dish, arrange spring onions, diced tomato, sliced olives, lettuce and avocado. Set aside.
    2. Place refried beans a microwave-safe bowl. Season with onion flakes, garlic, salt, cumin, chilli powder and oregano. Stir in water, cover and cook in microwave, on high, for about 2 minutes.
    3. Take one tortilla and spread a thin layer of beans on half of it. Sprinkle on the cheese and whatever toppings you would like. Spread soured cream over the other half of the tortilla.
    4. Fold the tortilla in half and then into quarters and serve.

Absolutely delicious. I altered avocado and lettuce for rice, it was both full of vibrant tastes and healthy.  -  28 Oct 2016

This is the PERFECT way to fold a 'burrito' - the bottom doesn't fall out, all the filling stay in place. Absolutely brilliant!  -  27 Feb 2015

Make these all the time, sometimes with, sometimes without ground beef. I used homemade frijoles with the frijoles recipe from this site. Very good, thanks Becky  -  03 Jan 2003  (Review from Allrecipes US | Canada)
