2 litres chicken stock
2 tablespoons rosemary
5 cloves garlic, finely chopped
1 teaspoon ground black pepper
1 teaspoon celery seeds
1/2 teaspoon fennel seeds
250ml clam juice or fish stock
85g tomato puree
250ml white wine
900g prawns with tails

Pour stock into a large pot and mix in rosemary, garlic, pepper, celery seeds, fennel seeds, clam juice, tomato puree and butter. Bring to the boil, reduce heat to low and simmer 1 hour, stirring occasionally.
Stir wine into the soup and continue to simmer and occasionally stir 2 hours.
Just before serving, stir in prawns. Continue cooking 3 minutes or until prawns turn opaque. Serve with bread for soaking up all the yummy soup.
