    About this recipe: A simple, yet utterly delciious salad that's easy to make. Spinach, strawberries, cashews and mushrooms are tossed in a creamy, sweet and tangy cashew dressing.

    Serves: 8 

    • 125ml olive oil
    • 35g cashews
    • 4 tablespoons warm water
    • 3 tablespoons honey
    • 1 tablespoon lemon juice
    • 2 teaspoons white vinegar
    • 3/4 teaspoon soy sauce
    • 2 cloves garlic
    • 340g baby spinach leaves
    • 50g chopped cashews
    • 150g sliced strawberries
    • 35g sliced fresh mushrooms (optional)

    1. Blend the olive oil, 35g cashews, warm water, honey, lemon juice, white vinegar, soy sauce and garlic in a liquidiser until smooth and creamy; chill in refrigerator for 1 hour.
    2. Toss the spinach, 50g cashews, strawberries and mushrooms in a large bowl until mixed; drizzle chilled dressing over the salad and toss lightly.
