Chocolate chip cookie bites

    Brilliant sweet snack idea, a simple and lovely chocolate chip, vanilla and pecan cookie mixture baked then broken into crunchy bites. Easy for wee hands to grab and wee mouths to munch on and enjoy.

    Serves: 30 

    • 225g butter, softened
    • 1 teaspoon salt
    • 1 teaspoon vanilla extract
    • 200g caster sugar
    • 250g plain flour
    • 170g plain chocolate chips
    • 110g chopped pecans

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat oven to 190 C / Gas 5. Grease a 25x38cm Swiss roll tin.
    2. Cream butter with salt and vanilla; beat in the sugar until light and fluffy. Mix in the flour until combined, then stir in the chocolate chips and pecans. Pat dough with hands into the prepared tin.
    3. Bake at 190 C / Gas 5 for 25 minutes or until light brown at the edges. Cool in tin on a wire rack. Once cool, break with hands into pieces.

    I picked this recipe because it doesn't have eggs in it and I wanted to bake it with my toddler. The flavor was too strong, almost bitter, and the texture made it hard to chew. Maybe I did something wrong, but I won't be making this again. On the plus side, the dough didn't taste as bad as the finished cookie, so it would be good if you want that raw dough taste without worrying about salmonella!  -  09 Nov 2009  (Review from Allrecipes US | Canada)
