    About this recipe: Fresh oranges, orange juice and lemon juice are blended with butter and icing sugar to make this tangy icing that's lovely on citrus cakes. This recipe makes enough icing to cover the sides and top of a 23cm cake.

    Serves: 20 

    • 50g butter, softened
    • 700g icing sugar, or as needed
    • 1 egg yolk
    • 2 tablespoons lemon juice
    • 3 tablespoons orange juice
    • zest from 1 lemon
    • zest from 2 oranges

    1. Beat the butter until it has the appearance of thick cream. Stir in icing sugar, a little at a time, and continue working until mixture is very smooth. Beat in egg yolk and lemon juice, then stir in enough orange juice to make a spreadable icing. Add grated rind of 1 lemon and 2 grated oranges. Spread on sides and top of cake.
