Coffee liqueur oatmeal chocolate chip cookies

    You probably haven't lived until you've tried these decadently delicious cookies made with porridge oats and candy coated chocolate pieces (llike Smarties®), all richly flavoured by coffee liqueur and baked into surprising chocolaty treats.

    Serves: 30 

    • 225g butter
    • 225g dark brown soft sugar
    • 200g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon coffee flavoured liqueur
    • 200g porridge oats
    • 250g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 300g candy coated milk chocolate pieces (like Smarties®)

    1. Preheat the oven to 190 C / Gas 5. Grease baking trays.
    2. In a large bowl, cream the butter and the sugars using an electric mixer. Mix in the eggs, vanilla and coffee flavoured liqueur.
    3. Measure the oats and blend in a blender to a fine powder. In a separate bowl mix together the flour, oats, baking powder, bicarb and salt. Stir the dry ingredients into the butter mixture until blended, then stir in the candy pieces. Roll into balls and place 5cm apart on baking trays.
    4. Bake for 10 to 12 minutes in the preheated oven, until the edges start to turn golden.

    These were really good. Made one batch with candy-coated pieces which were ok but made the second batch using 3/4 cup semi-sweet chocolate chips and 3/4 cups white chocolate chips and OH MY GOD - fabulous! Thanks so much for the recipe.  -  15 Apr 2007  (Review from Allrecipes US | Canada)
