Grilled tilapia with macadamia nut crust

    The moist and delicate tilapia fish, which has a mild, slightly sweet flavour, is very versatile. These oven grilled fish fillets go beautifully with the rich, sweet crunch of a macadamia nut crust balanced with piquant and savoury flavours in a mixture of soy sauce, hot sauce, garlic and brown sugar. Tilapia is also inexpensive and sustainable, so when you make this gorgeous fish dish, everyone wins!

    Ingredients
    Serves: 4 

    • 4 (170g) tilapia fillets
    • 300g macademia nuts
    • 1 tablespoon soy sauce
    • 2 cloves garlic
    • 1 teaspoon hot sauce
    • 1 tablespoon dark brown soft sugar
    • 1 tablespoon olive oil
    • 1 teaspoon ground black pepper

    Method

    1. Preheat your oven's grill. Line a baking tray with aluminium foil.
    2. Combine macadamia nuts, soy sauce, garlic, hot sauce, dark brown soft sugar, olive oil and black pepper in a food processor; blend until the mixture is the consistency of a paste.
    3. Spoon a thick layer of the macadamia mixture on top of each tilapia fillet. Place the fish macadamia mixture-side up on the prepared baking tray. Under the oven grill, cook fish until the macadamia crust is golden brown and the tilapia flakes easily, about 15 minutes.

    I've made countless recipes from this site, but this is the first time I have reviewed a recipe. I don't really care for fish much, but I've decided to eat it for my health. Looking for a recipe with ingredients I had on hand, I found this one. I can't get over how good it was. I absolutely loved it! To save money, I only used half of the macadamia nut mixture, but it would have been wonderful with the whole amount. I covered the fish with tin foil and put the fish in a 400 degree oven for 7 minutes. Then I put the paste on the fish and returned it to the oven (w/o the foil) for another 7 minutes.     If you follow the recipe to broil the fish, the topping will burn right away. I would recommend baking the fish at a high temperature with the topping vs broiling.  -  05 Feb 2008  (Review from Allrecipes US | Canada)

    This was incredible! It had a great flavor was easy to make. Everyone in my family loved it! I made a couple of small changes, I only used half of the nuts to make the paste and chopped the rest to sprinkle on the top.
