About this recipe: The moist and delicate tilapia fish, which has a mild, slightly sweet flavour, is very versatile. These oven grilled fish fillets go beautifully with the rich, sweet crunch of a macadamia nut crust balanced with piquant and savoury flavours in a mixture of soy sauce, hot sauce, garlic and brown sugar. Tilapia is also inexpensive and sustainable, so when you make this gorgeous fish dish, everyone wins!

Serves: 4 

  • 4 (170g) tilapia fillets
  • 300g macademia nuts
  • 1 tablespoon soy sauce
  • 2 cloves garlic
  • 1 teaspoon hot sauce
  • 1 tablespoon dark brown soft sugar
  • 1 tablespoon olive oil
  • 1 teaspoon ground black pepper

  1. Preheat your oven's grill. Line a baking tray with aluminium foil.
  2. Combine macadamia nuts, soy sauce, garlic, hot sauce, dark brown soft sugar, olive oil and black pepper in a food processor; blend until the mixture is the consistency of a paste.
  3. Spoon a thick layer of the macadamia mixture on top of each tilapia fillet. Place the fish macadamia mixture-side up on the prepared baking tray. Under the oven grill, cook fish until the macadamia crust is golden brown and the tilapia flakes easily, about 15 minutes.
