Cheesy tomato beef pasta bake

About this recipe: A hearty pasta bake of macaroni, beef mince, chopped tomatoes and tomato juice, grated Cheddar cheese and onions (if you like). Fun to make and enjoy with the kids at half term!

  • 700g macaroni pasta
  • 450g lean beef mince
  • 1L tomato juice
  • 2 (400g) tins chopped tomatoes, with juice
  • 450g grated mature Cheddar cheese, divided
  • 1 onion, chopped (optional)

  1. In a large pot with boiling salted water cook macaroni pasta until al dente; drain.
  2. In a large frying pan cook beef mince until no pink remains; drain excess grease.
  3. Preheat oven to 220 C / Gas 7.
  4. In a large bowl add the tomato juice, tomatoes, cooked beef mince, cooked and drained pasta and 225g of the grated cheese; mix well. Pour mixture into a 2 litre baking dish. Spread remaining 225g of grated cheese over the top.
  5. Bake in preheated oven for 30 to 40 minutes or until the cheese on top is melted, then grill until the cheese is golden brown.
