Barbecued pineapple chicken baps

    Simply barbecue chicken and pineapple with a honey mustard baste, then pile onto baps.

    Serves: 2 

    • 1 tablespoon honey
    • 1 tablespoon Dijon mustard
    • 1 (400g) tin sliced pineapple in juice
    • 2 skinless, boneless chicken breast fillets
    • 2 baps, split
    • 1 red pepper, thinly sliced

    1. Preheat barbecue for medium high heat.
    2. In a small bowl, mix together the honey and mustard.
    3. Barbecue the chicken breasts and pineapple slices, brushing occasionally with honey mustard mixture, until chicken is done and juices run clear.
    4. Serve chicken on baps, topped with pineapple slices and red pepper rings.

    Used different ingredients. I changed this slightly to make it easier for me. I used added a dash of ground cloves. It dissappeared quickly! My husband loves it!  -  18 Jul 2008


    I fixed these tonight and we really liked them. I omitted the red pepper just because I forgot to buy one! Very good and I will surely make it again.  -  18 Jul 2008
