About this recipe:A very healthful muffin full of wholegrain goodness. Be sure to use oat bran, not porridge oats. The apple sauce in place of some of the oil makes these muffins lighter than most. Use apple sauce, apple puree or even apple baby food.
110g dark dark brown soft sugar
140g oat bran
200g plain flour
2 teaspoons baking powder
2 teaspoons bicarbonate of soda
1/2 teaspoon salt
240g chilled apple sauce or puree
4 tablespoons vegetable oil

Preheat the oven to 200 C / Gas 6. Line or grease 12 muffin cups.
Blend together dark brown soft sugar, oat bran, flour, baking powder, bicarb and salt. Add eggs, chilled apple sauce and vegetable oil. Mix until well-blended. Spoon mixture into muffin cases. Let stand 10 minutes.
Bake at 200 C / Gas 6 for 15 minutes or until golden brown.
Add 175g raisins. Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.
