225g plain flour
45g unsweetened cocoa powder
1 1/2 teaspoons bicarbonate of soda
1 teaspoon salt
300g caster sugar
110g butter, softened
1 1/2 teaspoons vanilla extract

Preheat oven to 180 C / Gas 4. Grease and flour a 23x33cm baking tin.
Sift together the flour, cocoa, bicarbonate of soda and salt, set aside. In a medium bowl, cream together the sugar and butter until smooth. Stir in the eggs and vanilla. Gradually mix in the dry ingredients, alternately with the milk. Once all of the ingredients have been incorporated, mix on high speed of an electric mixer for 2 to 3 minutes. Pour cake mixture into the prepared tin.
Bake for 30 to 35 minutes in the preheated oven, until a skewer inserted comes out clean.
You can use two (23cm) round cake tins or three (20cm) round cake tins instead, just adjust the baking time as needed.
