About this recipe:A very easy vegan supper for when you're pressed for time. You could make this with other veg - courgette, peppers, spinach, or a combination. Fresh herbs would also make a nice addition - use whatever's in the fridge!
450g penne pasta
4 cloves garlic, minced
175ml olive oil
1 large broccoli, blanched
100g sliced black olives

Cook pasta in large pan with boiling salted water until al dente. Drain well.
In a medium frying pan over medium heat cook garlic in olive oil, being careful not to allow garlic to burn.
In a large bowl add the cooked broccoli, cooked and drained pasta, and black olives.
To serve, pour garlic oil over pasta and vegetables. Serve warm. Season to taste with salt and pepper, if desired.
